What’s the Recipe for the Best Tofu?
At Twin Oaks Community Foods we have a special recipe for tofu and for our lives: start with
a passion for quality, add skilled artisans fulfilled by living a sustainable lifestyle and mix well.
We’re not just a tofu company; we’re a worker owned cooperative and part of a larger community.
In fact, Twin Oaks is one of the oldest and largest secular intentional communities in the US. We
govern ourselves by a form of social democracy, and throw in a splash of old fashioned cooperation to perfect the dish.
You’ll find us on our farm in the foothills of the Blue Ridge Mountains in central Virginia. We’ve
been practicing a nonviolent, income sharing, egalitarian and ecological lifestyle since 1967.
That’s over 45 years of good vibes.
What Makes Twin Oaks Tofu Different?
Making tofu is an art. It takes a special kind of patience and cooperation to produce all our tofu in
small batches, but we are proud of our craft. We insist on producing the finest quality tofu with the
highest nutrition value possible. After 20 years of making tofu together we think we’ve got the knack.
Fresh, good quality and healthy food is essential to us. We cook from own gardens and eat our
tofu every day. This is why Twin Oaks Extra-Firm Tofu uses unbleached and non-fluoridated well
water; Virginia grown organic and non-GMO soybeans; and the highest quality organic herbs and
spices available.

For the salad:
8 oz (1 package) Twin Oaks More Than Tofu Spinach
Jalapeño, cut into half-inch cubes
1 cup black beans, cooked
1 scallion, chopped
1 cups corn, drain if frozen
1/2 cup tomato, diced
1/8 cup cilantro chopped
For the dressing:
1 medium poblano pepper
1 clove garlic
1 Tb lemon juice
1/2 Tb cumin
1/2 tsp honey or sugar
1/8 cup olive oil
Salt and pepper to taste
For the Dressing: Put the poblano directly on grate of gas burner with flame turned to high.
Roast until charred on all sides, turning with tongs. Transfer peppers to bowl, cover, and let
steam 15 minutes. Rub off skin and remove seeds. (If you don’t have a gas stovetop coat them
lightly in oil and roast at 375 F until charred, 30 – 45 minutes.)
In a food processor combine roasted poblano, garlic, lemon juice, cumin and honey or
sugar. Pulse until mixed thoroughly. Turn on low and slowly drizzle in olive oil. Add salt
and pepper to taste.
For the Salad: Combine Twin Oaks More Than Tofu Spinach Jalapeño, black beans, scallion,
corn, tomato, cilantro and dressing.
Mix well and serve with tortilla chips or over a bed of spinach or lettuce.

Thanks to Twin Oaks Community chef Carly, this easy to make recipe has become
one of our all-time favorites.
1 lb Twin Oaks Extra Firm Italian Herb Tofu
2 cloves garlic
2 Tb apple cider vinegar
½ cup extra-virgin olive oil
¼ Tb tumeric
4 scallions, sliced
½ cup grated carrot
Salt and pepper to taste
Crumble the Twin Oaks Extra Firm Italian Herb Tofu into a food processor. Add the garlic, apple
cider vinegar, extra-virgin olive oil and tumeric. Process until smooth. Fold in scallions and
carrots, season with salt and pepper.
Serve as a dip with crackers, crispy baked pita, or your favorite veggies. Makes a delicious
base spread for a sandwich or wrap.
