Cooking Instructions
Boneless ham:
Approximately 8 oz. (227 g) per person
Bone-in ham:
Approximately 10 oz. (284 g) per person
Diagonally score the surface of the ham. Brush
the ham with glaze, allowing the flavours to
penetrate. Place the ham in a 2½-inch deep
roasting pan. Add 1/2 to 1 cup of water at the
bottom of the roasting pan and cover with
aluminum foil to retain moisture.

cooking. Bring the holidays back to the kitchen

Roast in a preheated oven at 165 C (325 F) following
the roasting time chart. Baste the ham with glaze
every 30 minutes until it has reached an internal
temperature of 60 C (140 F). Remove the foil in the
last 15 minutes to get a crisp outer layer.
Allow the ham to sit for 10 minutes before carving
to prevent the juices from running and to retain the
moisture and flavour.
For spiral hams, cover with foil and roast at 165
C (325 F) for 14 mins per pound or until internal
temperature reads 60 C (140 F). Brush with glaze
in the last 10 minutes.

Fresh Belwood Turkey
Cooking Instructions
Portion size: Approximately 1 lb (454 g) per person
Remove the giblets and neck from the body and
neck cavity, then rinse and wipe the cavity and
sprinkle with salt and pepper inside and out. Place
the turkey breast-side-up on a wire rack in a 2½inch deep roasting pan. Brush with canola oil or
melted butter.
Cover loosely with aluminum foil and roast in
a preheated oven at 165 C (325 F). Follow the
roasting time chart. Baste the turkey with pan
drippings every hour.
Turkey is fully cooked and safe to eat when the
meat thermometer reads 77 C (170 F) for an
unstuffed turkey, and 85 C (185 F) for a stuffed
turkey. Remove the foil in the last hour of roasting
to get a lovely golden brown colour. For a crispy
caramel touch, brush with maple syrup in the last
30 minutes.
Once the turkey is done, transfer to a carving
board, keep covered and let sit for 20 to 30
minutes to allow the juices to distribute evenly
before carving.

Second Helpings
Candied Pecans
2 cups 2 tbsp 2 tsp Roasted Cauliflower, Prosciutto
and Gouda Casserole
( Serves 4 to 6 )
cauliflower head
5 to 6 slices prosciutto, julienned
Gouda, grated

Preheat oven to 190 C (375 F).
Cut cauliflower into small florets and wash
thoroughly. Dry the cauliflower with a
paper towel, toss with olive oil and season
with salt and pepper.
Place in a glass casserole dish and bake
for about 10 minutes. Remove from oven
and layer prosciutto, spinach and cheese
and return to oven. Cook until cauliflower
is tender and cheese is melted.

Preheat oven to 180 C (350 F). Place all
ingredients in a bowl and mix well. Spread
out evenly on a cookie sheet. Cook in oven
for 5 to 7 min. Remove and let cool. Pecans
can be stored in the fridge for a week in an
airtight container.

cashews or walnuts.
• Add 1 cup of cream with the
cheese and top with Panko
crumbs for a creamy and

Merlot-poached Pears
( Serves 12 to 16 )

pears, Bosc or Anjou
cinnamon sticks
1 or 2 pieces of star anise
1 tsp
corn starch (optional)
Pour the wine, water, sugar, cinnamon and star
anise into a sauce pot.
Zest half of the orange and add to the pot. Then
cut the orange in half
and squeeze its juice into the pot.
Peel the pears, leaving the stem on, and imme
rse into the wine mixture.

Holida y Bread Pudding
( Serves 8 to 12 )

5 white bread, cubed (day-old)
dried cranberries
eggs, beaten
Combine the bread cubes, cranberries and
pecans in a bowl. In a separate bowl combine
the cream, sugar, vanilla, cinnamon and eggs
and whisk well. Pour over the bread mixture.
Store this mixture in the fridge for 2 to 3 hours
Preheat oven to 180 C (350 F). Grease a
medium-sized pan and pour the mixture into
the pan. Dot with the cubed butter on top.
Place in the preheated oven and bake for 30

Poach on medium heat until the pears are just

Gently transfer the pears to a ceramic bowl. Mean

remaining poaching liquid and return to the sauce

corn starch and 2 tbsp of water, or cook over
high heat until a syrupy
consistency is achieved. Pour the syrup over the
pears. Refrigerate
overnight or for a few hours.
Before serving, cut the poached pear in half
and remove the seeds
with a spoon. Serve with vanilla ice cream.

• Replace cranberries with raisins or your
favourite fresh or frozen berries.
• Replace pecans with other nuts like almonds,
macadamia or walnuts.
• Serve with caramel sauce, crème anglaise
or berry compote.
• For mini bread puddings, bake in a muffin

• Use leftover brioche bread or panettone
instead of white bread.
