Product Ingredients
Soak 160g of dhal in 250ml of water and pressure cook for 10 minutes for upto 3 whistles.
Keep it aside. Heat oil in a kadai, add mustard seeds, onions, curry leaves and green
chillies. Add drumstick, cook for sometime and then add tomatoes and brinjal. Add Aachi
Sambar powder, coriander leaves, 750ml of water. Cook with closed lid for 10 minutes.
Add tamarind juice followed by dhal and coriander leaves. Finally add salt. Sambar is
ready-to-serve.

Recipe Ingredients
Red Gram Dhal – 400g (2 cups)
Drumstick – Medium size : 3 (2 inch piece – 30 pieces)
Brinjal – 300g
Tomatoes – 500g (Medium size : 5 nos.)
Big onions – 250g (Medium size : 2nos)
Small onions – 250g
Tamarind juice – 40ml (2 ½ tbsp) (Extracted from 50g tamarind soaked in 100 ml of
water)
Optional : Tamarind pulp – 40 ml (2 ½ tbsp) (Mix 30g (2 tbsp) in 10 ml water)
Oil – 150 ml (10 tbsp)
Mustard seeds – 10g (2 tsp)
Green chillies – 5
Curry leaves – 10 - 12
Coriander leaves – 4 – 5
Salt – required quantity
Water – 3000 ml

Preparation Method
1) Take dhal and wash thoroughly. Use 1000ml of water, salt, 30ml oil, turmeric and
pressure cook for 10 minutes for upto 4 - 5 whistles.
2) Soak tamarind in water and keep aside for 30 minutes.
3) Heat remaining oil in a cooking pan (kadai), fry mustard seeds until they splutter.
4) Add onions and saute till they become light golden in colour.
5) Add green chillies and curry leaves and fry for 2 to 3 minutes.
6) Add drumstick and cook for 5 minutes.
7) Then add tomatoes and cook for 2 minutes.
8) Then add brinjal and cook for 2 minutes.
9) Now add Aachi Sambhar Powder and mix well with all the ingredients.
10) Now add 2000ml water and mix the contents properly.
11) Cover the vessel with lid and cook for 10 minutes.
12) Once the vegetables are cooked, add tamarind juice and cook well for 2 minutes.
13) Add the pressure cooked dhal and coriander leaves and mix well.
14) Then add salt to taste. Allow it to cook for 5 minutes.
15) Sambar is ready-to-serve.
