Family Center’s guiding principle has always been to promote family wellness
doing a favorite activity like riding a bike.
ECD, or Early Childhood Development
mapping, has determined that for various
reasons Lethbridge in particular is a hotspot
for childhood developmental delay. This
makes Family Center’s community role all
the more critical. They are not a day care or
an agency which otherwise just fills in the
holes for the families in question. They are
there to support the supporter. They help
the caregiver help the child by enhancing
that person’s ability to provide their child
with the richest most nurturing environment possible. This is done by making sure
that adults’ challenges don’t get in the way.
However, because they are concerned that
their programs and services should be available to everyone, they can also provide
childcare, transportation or finances.
Towards this end some of the other services they provide are free parenting classes,
and free counselling right at the center.
Everyone at the Family Center knows what
they are doing. They're not just people with
big hearts, they are all trained professionals.
The Center itself received COA Accreditation
and is recognized as a Government of Alberta Parent Link Center. According to Alberta’s
Ministry guidelines this denotes centers of
excellence. Family Center is also an Alberta’s
Promise Agency.
Information, training, counselling, and
excellence are obviously very important, but
Family Center also recognizes that not one
agency can do it all by themselves. For this
reason referral is also a core service provided
by the Center. Peter Imhof, the Family Center’s Executive Director, assured me that in
Lethbridge the division of labor is actually
quite clear, and that referral is a strong suit of
our community. In other words, if Family
Center can’t handle the problem, there is no
problem getting caregivers referred to
someone who can.
The Family Center also believes in helping people right where they are. For this reason they also have contracts and satellites in
Magrath, Taber, and the Crowsnest Pass.

p.m. at the Coast Lethbridge Hotel and Conference Center. This will be the night of the
2nd Annual Lethbridge Family Center Charity Gala and Auction. Way back in 1994, two
Lethbridge organizations merged, namely
Family and Community Development and
Parents’ Place, to become The Lethbridge
Family Center. In 2010 they moved from
their location in an historic downtown building to the roomier and brighter location
they now occupy on the second floor of the
Lethbridge Center office tower. Family Center’s guiding principle has always been to
promote family wellness, mainly from the
standpoint of prevention, taking into
accounting the interdependent nature of
family relationships.
Society has changed much since 1994,
and this has also had an impact on the very
definition of what constitutes a family. The
Family Center recognizes this and understands that all families deserve support.
They therefore promote relationships which
respect the new and diverse modern spectrum. The idea is that healthy children grow
up in healthy families, and this in turn builds
healthy communities. Their work concentrates on families, parents, and caregivers in
Southern Alberta, primarily concerning children under the age of 6.
Because this is the time when a child’s
brain is developing most rapidly, this particular age is perhaps the most critical time to
intervene for the sake of successfully counterbalancing any difficulties or challenges a
child may be facing. This is the age when
children begin to learn language, gross and
fine motor skills, basic social skills, and they
begin to develop emotionally. It is the time
when children become able to learn and follow the directions of adults, but it is also
when they begin to learn how to self-regulate their own emotions and behaviors. For
example, whether they fail at a task or succeed, their ability to self-regulate will determine whether or not they spend the rest of
the day acting out, moping in a corner, or

Center's downtown location in the
Tower is a warm, welcoming, colorful
place where children are immediately
enticed into playing with the indoor
sand tray, the water table, or the slide.
They are encouraged to ask questions, and it’s okay to make mistakes.
Family Center and their clients have
enjoyed this location for almost five
years.
On Lethbridge’s west side, how-
ever, there has been extremely rapid
growth before and during that same
time period. With the young familybased demographic this has produced, there is still no support facility
for families on the west side. Family
Center is the first agency to want to
offer such support services there, and
they would be based out of the new
Copperwood Elementary school site
in School District #51. They are currently engaged in raising funds for the
proposed 2200 sq. ft. west-side
branch, and they will need somewhere in the order of $600,000 dollars

continued to be observed in Egypt till Christianity entered. If the
Gospel had come in power among the mass of the people, the
worship of this goddess-queen would have been overthrown. With the
generality it came only in name. Instead, therefore, of the Babylonian
goddess being cast out, in too many cases her name only was changed.
She was called the Virgin Mary, and, with her child, was worshipped
with the same idolatrous feeling by professing Christians, as formerly by
open and avowed Pagans. The consequence was, that when, in A.D. 325,
the Nicene Council was summoned to condemn the heresy of Arius, who

but not without the help of men who gave distinct indications of a desire

side by side with her Son. At the Council of Nice, says the author of
“Nimrod,” “The Melchite section” – that is, the representatives of the socalled Christianity of Egypt – “held that there were three persons in the
Trinity – the Father, the Virgin Mary, and Messiah their Son.”
In regard to the Pagan character of the mass, we have seen not little
already. But there is something, yet to be considered, in which the
working of the mystery of iniquity will still further appear. There are
letters on the wafer that are worth reading. These letters are I.H.S. What
mean these mystical letters? To a Christian these letters are represented
as signifying,“Iesus Hominum Salvator,”“Jesus the Saviour of men.” But
let a Roman worshipper of Isis (for in the age of the emperors there were
innumerable worshippers of Isis in Rome) cast his eyes upon them, and
how will he read them? He will read them, of course, according to his
own well-known system of idolatry: “Isis, Horus, Seb,” that is, “The
Mother, the Child, and the Father of the gods,” – in other words, “The
Egyptian Trinity.” Can the reader imagine that this double sense is
accidental? Surely not.

7 big (but easy) ways businesses can reduce
employee absenteeism
(BPT) - An ounce of prevention is
worth a pound of cure - especially for
small businesses grappling with the high
costs of worker absenteeism. Employee
time lost to health issues costs businesses
millions each year. For businesses, helping
workers stay healthy costs far less than
the financial impact of having them miss
work for illness or injury.
With cold and flu season in full swing,
HR directors and other business leaders
should take steps to help employees stay
healthy and on the job. Here are seven
steps your small company can take to
help reduce worker absenteeism:
1. Encourage healthful habits.
Simple factors such as getting
enough sleep and frequent hand washing
can go a long way toward keeping people
healthy. While you can't make workers get
seven to eight hours of sleep, you can
spread the word on how it's done. Key
tricks? Turn off the electronic devices an
hour before bedtime, avoid caffeine and
alcohol, and go to bed at the same time

workplace or offer a remote flu program,
making it convenient for individuals to
get vaccinated.

now a compliment

Chicken With Artichokes
and Angel Hair Pasta
Ingredients
1 cup chicken broth
¼ cup all-purpose flour
Salt and ground pepper
8 thin chicken cutlets
2 tbsp olive
oil
8
ounces
angel hair pasta
1 can artichoke
hearts
packed in water,
rinsed, drained,
and quartered
2 tbsp capers, drained
2 tbsp butter
½ bunch parsley leaves
Directions
1. Set a large pot of salted water
to boil. Meanwhile, add chicken broth
to a small saucepan, and bring to a
boil; cook until reduced by half.
2. Place flour in a shallow dish,
and season with salt and pepper.
3. Dredge chicken cutlets, shak-
ing off excess flour.
4. In a large skillet, heat 1 tbsp oil
over medium-high heat. Cook chicken in batches, adding remaining oil as
needed,
until
lightly golden, 1
to 3 minutes per
side; transfer to a
paper-towellined dish.
5. Add pasta
to salted boiling
water. Cook until
al dente; drain.
6. Meanwhile, add artichokes and
capers to reduced chicken broth, and
cook until it's heated through. Turn
off heat, and gently swirl in butter.
Cover, and keep heated. Just before
serving, stir parsley into sauce.
7. Stir sauce into drained pasta,
and divide it between 4 plates. Top
with chicken cutlets and serve immediately.

Julia Child’s Boeuf Bourginon
Ingredients
6 ounces bacon, solid chunk
1 tbsp olive oil
3 lbs lean stewing beef, cut into 2inch cubes
1 carrot, peeled and sliced
1 onion, peeled and sliced
1 tsp salt
¼ tsp pepper, freshly ground
2 tbsp flour
3 cups red wine
2-3 cups beef stock
1 tbsp tomato paste
2 garlic cloves, mashed
1 sprig thyme
1 bay leaf
For the braised onions:
18-24 white pearl onions, peeled
1 ½ tbsp unsalted butter
1 ½ tbsp olive oil
½ cup beef stock
salt & fresh ground pepper
1 bay leaf
1 sprig thyme
2 sprigs parsley
For the sautéed mushrooms:
1 lb mushroom, quartered
2 tbsp unsalted butter
1 tbsp olive oil
Directions
1. First prepare the bacon: cut off
the rind and reserve. Cut the bacon
into lardons about 1/4" think and 1
1/2" long.
2. Simmer the rind and the lardons for ten minutes in 1 1/2 quarts of
water. Drain and dry the lardons and
rind and reserve. Pre-heat the oven to
450°F.
3. Put the tablespoon of olive oil in
a large (9" - 10" wide, 3" deep) fireproof casserole and warm over moderate heat. Sauté the lardons for 2 to 3
minutes to brown lightly. Remove to a
side dish with a slotted spoon.
4. Dry off
the pieces of
beef
and
sauté them,
a few at a
time in the
hot
oil/bacon fat
until nicely
browned on
all
sides.
Once
browned,
remove to the side plate with the
bacon.
5. In the same oil/fat, sauté the
onion and the carrot until softened.
Pour off the fat and return the lardons
and the beef to the casserole with the
carrots and onion.
6. Toss the contents of the casserole with the salt and pepper and
sprinkle with the flour. Set the uncovered casserole in the oven for four
minutes.
7. Toss the contents of the casserole again and return to the hot oven
for 4 more minutes. Now, lower the
heat to 325°F and remove the casserole from the oven.
8. Add the wine and enough stock
so that the meat is barely covered.

For the cake:
1 ½ cups flour
½ cup sugar
1/3 cup milk
1 egg
2 tsp vanilla
extract
2 tsp baking
powder
pinch of salt
2 tbsp cinnamon
¼ cup butter,
melted
For the filling:
¼ cup butter, softened
¼ cup brown sugar
1 tbsp cinnamon
½ cup chopped pecans
For the icing:
¼ cup cream cheese, softened
2 tbsp milk
1 ½ cups powdered sugar
to the dry ingredients and mix thoroughly.
4. Spray muffin tins with non-stick
spray. Fill ¾ full with batter.
5. Bake at 350 degrees Fahrenheit
for 20 minutes or
until you insert a
toothpick and it
comes out clean.
6.
Remove
from oven and let
cakes cool. Once
cool,
remove
from muffin tin
carefully so it
does not break.
7. Flip cakes upside down and use
a spoon or fork to carve a hole at the
top of the cakes.
8. To make the filling mix together the butter, pecans, cinnamon and
brown sugar. Stuff the mixture into
the hole you created.

11. Pour in the stock, season to
taste, add the herbs, and cover. Simmer over low heat for about 40 to 50
minutes until the onions are perfectly
tender but retain their shape and the
liquid has mostly evaporated. Remove
the herbs and set the onions aside.
12. For the mushrooms, heat the
butter and oil over high heat in a large
skillet. As soon as the foam begins to
subside add the mushrooms and toss
and shake the pan for about five minutes. As soon as they have browned
lightly, remove from heat.
13. To Finish the Stew: when the
meat is tender, remover the casserole
from the oven and empty its contents
into a sieve set over a saucepan. Wash
out the casserole and return the beef
and bacon to it (discarding the bits of
carrot and onion and herbs which
remain in the sieve).
14. Distribute the mushrooms and
onions over the meat. Skim the fat off
the sauce and simmer it for a minute
or two, skimming off any additional
fat which rises to the surface. You
should be left with about 2 1/2 cups
of sauce thick enough to coat a spoon
lightly. If the sauce is too thick, add a
few tablespoons of stock. If the sauce
is too thin, boil it down to reduce to
the right consistency.
15. Taste for seasoning. Pour the
sauce over the meat and vegetables. If
you are serving immediately, place
the covered casserole over medium
low heat and simmer 2 to 3 minutes.
16. Serve in the casserole or on a
warm platter surrounded by noodles,
potatoes or rice and garnished with
fresh parsley. If serving later or the
next day, allow the casserole to cool
and place cold, covered casserole in
the refrigerator. 20 minutes prior to
serving, place over medium low heat
and simmer very slowly for ten minutes, occasionally basting the meat
and vegetables with the sauce.

It’s time to learn
about kidney disease
March is National Kidney Month in Canada and although there
are more than 30,000 Canadians who are currently being treated
for kidney failure, most people have never heard of kidney
disease until it affects them, or someone they care about.
Why are kidneys so important?
Our kidneys regulate water. For the body to work properly, it
must contain just the right amount of water. One of the
important jobs of the kidneys is to remove excess water from the
body or to retain water when the body needs more. Our kidneys
also remove wastes. Many of the substances in the blood and
body fluid must be kept at the correct level for the body to
function properly. Healthy kidneys excrete excess minerals, such
as sodium and potassium, from the body in the urine and they
also help to regulate the levels of other minerals, such as calcium
and phosphate. Another important task performed by our
kidneys is that of producing hormones. These hormones
circulate in the bloodstream and regulate some body functions
such as blood pressure, the making of red blood cells, and the
uptake of calcium from the intestine.
What is kidney disease?
Kidney disease describes a variety of disease and disorders that
affect the kidneys. Most disease of the kidneys attack the
filtering units of the kidneys (the nephrons) and damage their
ability to eliminate wastes and excess fluids.
